His favorite lover was probably Cyrene, a nymph raised as a shepherd girl/huntress by her father, the Lapith king Hypseus. She was a nymph because her mother, Creusa, was a nymph too. Apollo saw her chase away a lion that was despretely trying to kill one of her father's sheep. Apollo was instantly infatuated with her after this and took her to Libya via his sun chariot. There he took her as his lover and founded the ancient city of Cyrene in her honor. Because she was a nymph, she had the power to stay young forever with Apollo. Cyrene bore him Aristaeos, Idmon, and Autuchus. As an adult, Aristaeos seeked advice from his mother, Cyrene, and as a result, taught humanity the secrets of beekeeping. Apollo later made his son, Aristaeos, a god as well.
