First try turning your device off and turning it back on.
If that doesn't work try resyncing the iPod through iTunes. This should fix the problem.
If not, try restoring to a previous backup when your applications did show up.
If this either doesn't work or you don't have a backup to restore to the only option may be to reset your device by restoring it to it's factory settings.
If your apps are still not showing up after doing a factory reset you may need to contact Apple for further assistance.
