Vinnie Chieco, contracted by apple, thought of the name. He, thinking of more Science Fiction based names, considered the project to be made of 2 parts: A main space hub, as in outer space docking stations, and a much smaller pod to travel away but always return to the hub. Apple was working on a jukebox program to store the songs, so his device was the little "pod." As with most apple products, they just added the "I" and then iTunes came shortly after. Wired Magazine has the story.
