The iTunes store displays 50 song titles as a summary of the artists output. If you click on See All then their full catalogue is listed on separate pages. For some artists this can run into several pages of hundreds of songs.
Why would some artists choose to place free copies of their music on the web?
There are many reasons that someone might choose Emusic over a service such as iTunes or Amazon. The biggest one is price: on average, Emusic downloads are about 50% cheaper. Other reasons are the recommended artists based on your downloads, a focus on music and only music, and lack of DRM on the files.
You can't edit them there. You have to edit them in iTunes and then re-sync.
Because thats how artists make their money.... :)
Some artists don't like their songs being downloaded, due to the fact that one person may buy it and just give it to all their friends and the artist makes no money. So, not all artists are available for purchase on iTunes. It would be best to just track down a CD.
To stop iTunes from syncing your entire library to your iPod Shuffle, connect the device and open iTunes. Select your iPod Shuffle from the devices list, then go to the "Music" tab. Uncheck the option that says "Sync Music" or choose "Selected playlists, artists, albums, and genres" and manually select the specific content you want to sync. Finally, click "Apply" to save your changes.
Search for Hallelujah in itunes and you'll be rewarded with a list of all the artists and purchase options. Previewing the song will enable you to listen to a short section to check it's the one you'd like to purchase.

The music in the iTunes store is supplied by license from the record companies. Songs purchased from the iTunes store will benefit the artists in a similar way as purchasing a CD from a regular store.
iTunes only has access to the tracks that the record companies (or whoever owns the rights to the tracks) have licensed to them. While it has a huge amount of content there are many artists/record labels that are not available from iTunes.
