To reset the trim odometer on a Vauxhall Insignia, turn on the ignition without starting the engine. Press the trip reset button on the instrument cluster until the display shows the current trip mileage. Then, press and hold the trip reset button for a few seconds until the trip odometer resets to zero. Release the button, and the trim odometer should now be reset.

Its different depending on year, and trim package. The lube guy at any service shop should be able to walk you through it, and it is in your owners manual. On your 05 Accord, press and hold the odometer reset button while you turn the ignition switch to the on position without starting the engine. After 5 seconds the maintenance required light will reset.
On the early "Vectra B" models it's under the trim immediately under the Hand-Brake lever.

If an odometer has been turned back you can usually see tell tale signs that the numbers don't allign correctly. The other way of checking is for wear and tear on the trim within the car. If the vehicle mileage is showing as 20000 miles and the steering wheel and gear stick trim etc is worn then you can put a reasonably safe bet that the vehicle has done far in excess of that mileage.
