The type of operation for a gate valve is that it has a turn screw handle and when looking inside the valve it appears as though a coin like object is closing in on the gap where the water would be passing through and shuts the water off. A slide valve type operation is when the handle is not screw type but has a handle that turns from side to side with a maximum adjustment of 90 degrees. When looking inside the valve it appears as though a ball is being turned 90 degrees which closes the water off.
The difference is that a sluice gate is made out of cast iron while a slide gate isn't.
