Just an update, we didn't want to take the time in removing the fuel system so we held it to the side and unscrewed the 8 bolts holding the intake in, after that it was pretty simple to detach the intake manifold and "finagle" it out. However, i did run into a problem with the chosen header going in to replace the old exhaust manifold and had to grind the outsides of the intake manifold around the bolt holes in order to make the exhaust manifold fit correctly.

If they do not match you'll either have to find a set of heads that have a matching bolt pattern or look for a set of exhaust manifolds that have a bolt pattern to match your heads. any hole in your exhaust system will cause the car to run a bit differently as it affects the breathing of the engine. If the flow of exhaust gases through the exhaust has changed due to the holes it could cause the lamda/o2 sensors to not receive a true/accurate reading of how the engine is running - that could possibly explain the reduced MPG (if the engine thinks the air/fuel mix is incorrect it could be trying to compensate by using more fuel)
