There are 3 screws and about 6 retainers holding the door panel in place. The first screw is above the door speaker, one is behind the door handle, and the other is in the arm rest. Once those are gone, you should take off the window crank, if you have one. The factory service manual says to use a special tool, but you can also use an ordinary rag. Slip the rag and start to "floss" the door handle to catch the hook. Mine popped off after a minute or so of this. Then it's just a matter of unpopping the retainers and sliding it off the window hold. The door and lock rods just unpop at the handle. They're kind of a pain, but with some fiddling around they come off. Easier to have someone hold the door panel while you screw with it...
The 2003 VW front door threshold trim is held in place with for retaining screws. Remove the retaining screws and the threshold trim will come off.

You have to take the inside door trim out of the door, then there will be some bolts on the inside of the door remove the nuts and your door latch will come out.
