Esophageal achalasia is the term used for the failure of the lower esophageal sphincter to relax, resulting in functional obstruction of the esophagus, and dysphagia. There is total absence of peristalsis of esophagus, and failure of the lower esophageal sphincter to relax when food or liquid is swallowed. This gives rise to vomiting of food or liquid as soon as it is swallowed. There really isn't any cause but there are some guesses none are proven.

The sphincter of Oddi (hepatopancreatic sphincter), controls the release of pancreatic enzymes and bile into the duodenum. During digestion, intestinal phase signals stimulate the release of bile.

The duodenum is the first, and smallest, section of the small intestine in mammals. It is the responsible for the majority of chemical digestion in the small intestines.
The lower esophageal sphincter keeps food from coming back up, or vomiting. When you have to vomit, the sphincter opens allowing the food to come back up. There is another sphincter, the pyloric sphincter which leads into the small intestine. Hope this helps!

The pyloric sphincter is a valve that opens and closes to allow chyme to leave the stomach and enter the duodenum. The cardiac sphincter is a valve that opens and closes to prevent stomach acid from going up the esophagus.
The duodenum has a sphincter that controls the opening of the stomach to dump partially digested food into the small intestines. This sphincter can be weakened by stomach ulcers. After the duodenum, food stuffs continues through the small intestines where most digestion takes place.
I can think of 5 off the top of my head. Cardiac Sphincter at the top of the stomach. Pyloric Sphincter at the distal end of the stomach. Ileocecal Valve that separates the Small and Large intestines and the Internal and External Anal sphincters.
