The Olfactory senses refer to the ability to smell.

In humans, Olfaction is carried out by the binding of specific molecules to receptor molecules by way of form-fits-function or lock-and-key mode. They bind in the plasma membrane of chemoreceptor cells which triggers action potentials. In turn, this is passed along to neurons in the olfactory bulb of the brain, resulting in the relay of the signal for you to be able to sense different scents.
