I actually asked my father this very question, figuring he'd know the answer since Kaleh Pacheh (Goat's head soup) is one of his favorite foods.

According to him, cow and sheep eyeballs don't taste like much of anything. He described the taste and texture as similar to Jell-O (without fruit flavor) or gristle. It's also, uh, slightly more crunchy in the middle. Usually the very center of an eyeball isn't edible.

So in other words, you're probably not missing out on a lot.
