According to him, cow and sheep eyeballs don't taste like much of anything. He described the taste and texture as similar to Jell-O (without fruit flavor) or gristle. It's also, uh, slightly more crunchy in the middle. Usually the very center of an eyeball isn't edible.
So in other words, you're probably not missing out on a lot.
