Short answer:

This is formed during the metabolism process. First, glycolysis is broken down to pyruvate acide and then into acetyl Coa. Acetyl Coa goes into the mitochondria and then into the Citric acid cycle. This is where most of the ATP and ADP is formed.

From there ATP is passed along the Electron Transport Chain where hydrogen is passed along. Oxygen is at the end of the chain "waiting". The cycle goes around twice, so 2Hydrogen plus Oxygen=H2O.

With out oxygen "waiting" at the end of the chain, lactic acid will build up. This is what causes the stiff feeling while/after exercising.
