A plant cell has a cell wall which helps it keep its shape. An animal cell doesn't have a cell wall! So that circular shape represents a "blob" or something, it can take a shape because the lack of cell wall!

Not all animal cells are circular however, the general shape and size of cells maximizes the cell's surface area to volume. This allows the cell to acquire nutrients more rapidly and (in a complex multicellular organism) maximizes the number of cells that can get that nutrition from the circulatory system.

I am not quite sure. I do know however, that this statement is true, as plant cells are found to have a rectangle/squarish shape so that it is easy for them to stack.
