Humans and other land animals have a natural craving for salt because it is absolutely essential to life and used to be hard to get unless you lived near a source such as the sea. Roman soldiers used to be paid partially with a salt ration, giving rise to the expression "worth his salt."

However, we have far too much of it in our modern diets. A great deal is added to satisfy that craving which -- like our cravings for fats and sugars -- is not sated by receiving only what we need.

Like death. It is quite possible to get used to foods with lower levels of salt, but like other dietary changes it requires a determination to change lifestyle, not just cut down.
