The body struggles to maintain a constant level of salts as well as water for proper functioning. If you eat too much salt, your kidneys have to dispose of the excess. Excreting salts requires that water be sent along with the salts into the urine. Since you are urinating out some of your body's water, your brain tells you to drink more, so you feel thirsty.
When you eat salty things you become thirsty because the concentration of salt to water has increased. This is because salt is a substance that requires an equilibrium with water. Water must leave the blood stream in order to maintain this equilibrium. When water leaves the blood stream you lose water through urine and so it must be replaced by drinking more water; hence you becoming thirsty.
When you eat some thing salty, more salt enters your blood. This increases the osmolarity of the blood. This is equivalent to loss of water from your blood. Hyper osmolarity of the blood stimulates your thirst centre. So you feel thirsty. After you drink water, the osmolarity comes to normal level. Kidneys have to do over work to excrete that extra salt.
