Birds do not eat their own droppings. What you are seeing when you see a bird pick up dropping in it's beak, is a protective mechanism whereby the parent removes any tell-tale evidence of the presence of young in a nest. The parent will pick up the hatchling's droppings in their beaks, fly away from the nest and drop the offending matter, so that the nest is kept clean--a dirty nest is a giveaway sign for predators.
