Glucose is sparingly soluble in ethanol.

This is because the organic molecules of the ethanol are too large to separate the glucose, unlike water where the water molecules are easily able to dissolve the crystalline structure to react with the -OH groups.

No. Glycogen is far to large to dissolve in water. Glucose is soluble, as it is a smaller molecule, and the OH groups can form hydrogen bonds.

Glycogen however is made of many branched chains of glucose, and although it can still form hydrogen bonds, it cannot form 'enough' to dissolve in water.
