That depends in part on the type of gravy. Generally speaking, most gravies have a fair amount of salt, which, if you're worried about it burning in a mouth sore of some kind can be just as bad as an acidic food. A gravy is generally based on 3 things: a fat (stock, broth, bacon grease, butter, etc), a base liquid (usually water or milk), and a starch for thickening (usually corn starch or flour). Fats are generally weakly acidic, as is milk (and milk buffers, so it will lessen further changes in pH). Starches usually won't do much to change pH. So yes, gravy is acidic, but weakly so.
