Numbers in the 600 range are used for flavor enhancers, not preservatives. 621 happens to be the sodium salt of glutamic acid, otherwise known as monosodium glutamate or MSG.
Glutamic acid is an amino acid... a building block for proteins... and sodium is slowly recovering its reputation after being branded as icky bad evil for a couple of decades (turns out, sodium in moderation is fine! Who would have thought?).
