Cu and it needs to have 11 dots around the Cu

Copper is an exception to electron configurations. It is has a partially filled 4s orbital and a full d orbitial

[Ar] 4s13d10 instead of [Ar] 4s23d9

therefore, the dot diagram would be Cu with one dot, because there is only 1 electron in the 4s.

A dot diagram tells you the number of valence electrons. The PT tells you that in the number at the top of the column. Silver is in group 1B and has one valence electron, and therefore one dot.
