Vapor - that's why it's called evaporation. The liquid that is evaporated, of course, will have a more specific name, such as ethanol that results from the evaporation of whiskey (so drink it as fast as you can) or water vapor from the evaporation of water. Steam, or clouds, is water vapor that has condensed to very fine particles of water.

Water also evaporates from milk, hence milk with less water than it should have is called 'evaporated milk'.

Direct evaporation from a solid to vapor is known as sublimation, and occurs with some dyes for example, that can be used to dye patterns on T-shirts by using a hot iron to iron paper printed with sublimation dyes, so that the dye (vapor in this case) transfers directkly to the cloth.
