In this reaction, sulfuric acid works as a catalyst, thus if it was removed, the reaction wouldn't occur as quickly, if at all. H2SO4 speeds up the reaction to make it occur more quickly and efficiently.

Could you please be a bit more specific, because usually it is not, depending on the product being acetylized. My best guess would be that it is being used as a catalyst for the reaction, in which case 'concentrated' Sulphuric acid would be used (very carefully). There are a number of other catalysts that could be used, again depending on the product in queston.
