Pure water at standard atmospheric pressure (1 atm) boils at 100 °C or 212 °F. You would not expect ink to boil at the same temperature for 2 reasons:
1) if it is oil based ink, then it is of a much different composition than pure water and would boil at a temperature closer to that of the main liquid of the ink
2) if it water based, pigments will have been added to it to make it an ink. Adding anything to water will change the boiling point - raising it as long as water is still the main ingredient.
A very careful selection of main solvent and additives MIGHT manage to duplicate the boiling point of water, but that is extremely doubtful and would not really be ink.
