Well, my degree is in chemistry, and you've stumped me; I can't think of a single word that means specifically that something reacts with vinegar.
Alcohols react with vinegar (and other carboxylic acids) to form esters, primary and secondary amines react with vinegar (and other carboxylic acids) to form amides, but as far as I know there is no specific word meaning "reacts with vinegar". Maybe the word "vinegar" is a clue; a chemist would call it "dilute acetic (or ethanoic) acid", so perhaps there's a term in cooking that means exactly what you asked ... though cooks tend not to focus so much on "reacts with".
