"Burning" is chemical combination with oxygen, typically. Other chemicals like fluorine or chlorine can also support combustion. Most minerals are not very reactive with oxygen and so even heating them to extreme temperatures does not cause them to chemically react with oxygen. Metals, however, burn. Magnesium is used as a firestarter, alkali metals like sodium burn in contact with water, etc. Sulfur burns very awesomely.
