The first to write down the story of Hansel and Gretel were the Brothers Grimm; but it's very likely that the tale was an oral tradition that had been around for many generations earlier.
The Grimm Brothers, Jacob and Wilhelm, are known for collecting and publishing folklore tales such as "Cinderella," "Snow White," "Rapunzel," "Hansel and Gretel," and "Little Red Riding Hood." Their collection of stories is known as "Grimm's Fairy Tales."

The brothers Grimm were not writers. They were compilers. They complied a collection of fairy tales. Some of the best known are probably Snow White, Rapunzel, Cinderella, Hansel and Gretel, and The Giant and the Tailor. There are around 200 others.
Jacob and wilhem grimm wrote fairy tales in the 1800'sthey wrote down magical phenonamens so they basically wrote a lot of fairy tales in that time check Google fairy tales and you will see grimms fairy tales every single ft that they wrote is there. They actually didn't write any, they collected them from story tellers around Germany. They did take some creative license when writing them down though, as originally fairy tales were for adults and contained graphic and dark subject matter. When the Brothers Grimm wrote down the stories, they edited them to be children's stories.
Examples of American folk tales are Paul Bunyan, John Henry, Pecos Bill, known as the Big Man Tales; and Bre'r Rabbit originating from similar African slave and early Native American tales of a trickster rabbit.
