In the comic books, she often helped out at the school, even teaching. She was also a wife and close friend to many. She had also worked as a swimsuit model when she had left the X-men in their early days, and had previously gotten her college degree. Jean doesn't leave the team often, so it isn't shown much what she would do if not involved. Being an X-Man seems to be a full time job as it is.

In the films, Jean was a doctor of genetics. She worked at Xavier's School as their doctor, a teacher, and a member of their X-team.

There are several Cartoons. In X-Men: The Animated Series, it was a running joke among fans that the school "never showed anyone teaching or learning anything". In that series, the school/mansion was just there for a base for the X-Men, not a school. In X-Men: Evolution, Jean was a student at Bayville High and lived at the Xavier mansion where she learned to control her powers. After she graduated high school, she talked about going to college to study genetics (like her movie counterpart) and taught some of the younger students at the school. In Wolverine and the X-Men, the most of what we see of the school was demolished in present day and Jean had disappeared (to reappear roughly eight episodes later). Not much is shown of before the school was demolished, so it isn't known what she did before, and the show was never green-lighted for a second season.
