because they attained independence from the british and decided to establish their own flag (although the union jack used to be part of the flag, instead of stars)

The jack refers to the jackstay of a ship, on which the Union Jack would be displayed. Strictly speaking the flag should be called the Union Flag, but Union Jack is well known. Actually, the union jack is what the flag is called out at sea, but the union flag is what they call it on land.
Australia doesn't have a flag with no stars.If you are just referring to general flag that would look like an Australian flag with no stars, it is a Union Jack Ensign with a Navy Background.
