The difference in the number of zones represents the number of divisions of the environment that can be protected. For example, zone 1 may be the front door while zone 6 could be the private entry door from the garage and yet another zone could be the door to the medicine room. (I am presuming a doctor's office here for this example.) The function of the alarm is the same. It can use the same motion sensors, smoke detectors, glass breakage sensors, etc.
