If by "home screen", you mean lock screen, you can do so in Settings > Wallpaper. I am not familiar with iOS 1 or 2, but I wouldn't imagine there is a different place in Settings if you are running either of those versions.
Also note you cannot change your wallpaper for the "home" screen where your apps are located, this feature is restricted to iOS devices such as the iPhone 4 and newer, the iPod Touch (4th generation) and newer, and all iPads.
