Adding a secondary email address helps ensure that you can still access your account, even if you lose access to your primary email address on the account. You can add or edit your email addresses from your Account Settings page, accessible from the Account drop-down menu at the top of any Facebook page. Take the following steps to add another email:
Click "change" in the Email section.
In the "New Contact Email" field, carefully type your alternate address.
Click the "Add New Email" button. You will then be asked to enter your password to confirm the requested change, and an email will be sent to this address containing a confirmation link.
Follow the instructions in the confirmation email to complete the process.

The sender's email address is included automatically as the sender. Well, yes and no. Most email clients such as Thunderbird allow you to set up multiple email addresses and send emails from any of them. So you could set up fake @fake.com as a second address, then send emails from that and your real address would not be included in the header, although other information that could be used to track you may be.
