Assuming you are jailbroken, get ifile, open it and then goto Systems-Library-CoreServices-SpringBoard.app-English.Iproj
Open up SpringBoard.strings file (its sort of a text file with all the different kind of text included in the iPhone)
Scroll down a bit till u get to "AWAY_LOCK_LABEL" = "Slide to Unlock"
Just change the text in the second set of quotations to whatever you want.
slide to unlock.
Slide to bar labeled "Slide to unlock" all the way, then, if needed, enter the passcode.

The iPod touch doesn't have cellular network access so you can't "unlock" it in that sense. There is a bar which comes up on the bottom when you have "locked" the touchscreen controls which you slide to unlock.
There is usually a locking wheel at the rear of slide.
To unlock the slide lock on your SD card, simply slide the switch on the side of the card to the unlocked position. This will allow you to write, delete, and modify the data on the card.
You can add a password lock. You must answer the password (type in the 4 digit password) then unlock. if you jailbreak it will make it look different like it will say your name where you must slide.
you press the button at the top on the left , which will make the screen light up then you slide across the arrow where it says slide to unlock xx
There is normally a little switch on top you can slide to unlock your player.
