Use a program such as Audacity to create a WAV, OGG Vorbis or AIFF file. If you add on an open source MP3 codec, you can also create MP3 files.
I use a few different tools, but not iTunes - the sound of converted CD's is not as good as Windows Media Player (on PC - I do get decent results on my "vintage" iMac with iTunes 4 and Soundjam). For general WAV to Mp3 I usually use the Acoustica converter or Blaze.
You can create backing tracks from MP3 files by using audio editing software like Audacity or GarageBand. Simply import the MP3 file into the software, isolate the parts you want to use as backing tracks, and then export the edited audio as a new file.

The original iMac was the G3 which came out in (1998). It was followed by the G4 (2002), then the G5 (2004), then the Intel iMac plastic version (2006). The 5th iMac was the aluminum iMac which came out in (August 2007), followed by the iMac Aluminum Unibody (2009). The newest iMac is simply called 2012 iMac and it came out on November 30, 2012.
