Assuming the app has been deleted and not just had its icon removed from the Dock (in which case it can still be found in the Applications folder) the iPhoto application can be installed from the original software discs that came with the iMac. Other photo applications will need to be downloaded from the developers website or the Mac's App Store if they are no longer available on the iMacs hard disc or a backup disc.

The icons in the Dock are just shortcuts to the application. The applications are usually in the Applications folder. From the Desktop select Go from the Finder's menu and then select Applications to open the Applications folder. Double clicking an application's icon from there should launch the application and add it's icon to the Dock. If you wish to keep the application in the Dock click and hold the mouse on the icon and select Keep in Dock. The Developer's tools, including Xcode, are usually stored in a Developer folder at the top level of the hard disc. When looking at the Applications folder (as above) you should have a side bar to the left of the window which lists Devices available to your Mac. Select the name of your disc under Devices and then the Developer folder. Within the Developer folder there are several folders including Examples, Documentation, Extras etc. There is also an Applications folder (unrelated to the other Applications folder) which includes Xcode. Double click the Xcode app's icon to launch and then select Keep in Dock as above. If an application repeatedly Quits Unexpectedly then it may be conflicting with some other application. Try Restarting the Mac and running the application before anything else. It may need to be reinstalled if it continues to be problematical.
A .dmg file is a Disc iMaGe typically used for delivering software. To open the file requires a double click on the file's icon. Once opened an icon representing a disc drive will appear on the desktop. A window will usually open automatically to reveal the contents of the "disc" but if it does not then double clicking on the disc drive icon will open the window. The software contained within should either be dragged into the Applications folder or, if it is an Installer, double clicked to start the automatic installation process. Once the software has been installed on your hard disc the .dmg disc drive icon can be selected and then ejected and the .dmg file itself can be moved to the trash for deletion.

The MacBook Air does not have any disc drives. If you need access to a disc the you use the disc sharing feature of Mac OS X so the MacBook Air can read the disc in another computer connected to the same network.
