Select 'file' at the top left, scroll down to 'add file to library'. Highlight all the songs you want and then click on the 'recently added' tab in the left-hand column. Should all be there :D
If you connect the iPod to iTunes, go to the iPod's music library, and then just drag the songs from the iPod to the iTunes music library.

If you have sync set to on (deffault), whenever you plug in your iPod, all of the songs that you added to your iTunes library will be added to the iPod library.

Either: -Remove the songs from your iTunes library or -Create a playlist and put all of your songs into that one playlist. Then change your iPod settings to not sync all music in your library, but instead only sync selected playlists. You can then delete songs from the playlist but still have them in your iTunes library, and they will therefore not be synced to your iPod
