In MS Word 2007 or 2010, select the "Page Layout" tab. In the "Page Setup" block that will change the orientation of the section in which your cursor is selected, or of the entire document if there is only one section.

Earlier versions of MS word have this function located elsewhere, and other programs do it differently, as well.
