It comes from XL, a similar sound to Excel. The extension was xls which stands for Excel Spreadsheet. Since version 2007 it is now xlsx instead, so they have used the X again.

The "x-axis" usually refers to the horizontal axis. In Excel, that would be relevant for graphs created with Excel.
While in an excel document you can press control-s ('Ctrl' and 's' on the keyboard at the same time), or for excel 2007 and later you can click on the round icon (a windows icon) in the top left corner, and a drop down menu will appear. You can then click save on the drop down menu.

There is no direct option available to convert MS Excel 2007 look and feel changed to MS excel 2003. However, you can customized the MS Excel 2007 to your need.
