while there both from the same cut.delmonicos are cut from more the loin end with less deckle.wich is the wrap around top part of the steak that people seam too like the most.but its all 6 in one and a half dozen in the other.deckel is also another term used for a cheaper cut
Both the Delmonico and the Rib-eye is the same cut of meat except the rib-eye is thicker, usually 7/8 to 1 inch thick, usually served at the evening (supper) meal. The Delmonico would be 1/2 to 3/4 inch thick an served for a lighter (lunch) meal.
