According to this page at Cook's Ham, if you're not going to eat it within 7-10 days, freeze it, then thaw in fridge...it's all at this link. I was wondering the same thing, this year, when I get the free ham from the supermarket promotion that I usually donate to a food bank, I'm going to have to cut it in pieces and freeze it for several meals for me.
