The shelf life that I have seen is generally around 4 months. If stored in a cool area, it should keep a bit longer, but might not be quite so good as when used before the 'best buy' date.
Act like friends around him and in time he will be ready. If you pressure him he'll freak out. Just wait and don't push it. If you feel you cant wait any longer try asking him why he isn't ready but do it kindly and not like you are interrogtating him.
