We love Carbonara as a pasta sauce in our home and here is our incredibly simple recipe.

These are proportions for 4 servings:

8 bacon rashers, allowing 2 rashers per serve, trimmed of all fat and cut into 1/2 inch squares. I use kitchen scissors as this works so much faster than slicing - you can cut 4 slices in one go, and it's done in no time!

2 cups of sliced mushrooms.

1 cup of cream cheese or if you must, sour cream ( I use cream cheese to be healthier)

1 cup greek yoghurt

Firstly, fry the mushrooms in a knob of butter. Be sure NOT to season it. Mushrooms must be cooked first and then salt added after as otherwise it'll sweat and you'll end up with an overly liquidy sauce.

Toss in the sliced bacon pieces. Fry till cooked. This takes only a few minutes.

Into the pan, pour in the sour cream / cream cheese and stir through making sure the mixture does not boil.

Lastly, as the meal is about to be served, stir through the greek yoghurt, warming it through but never to the boil.

I've found there's no need to add extra seasoning as the bacon makes the meal sufficiently tasty.

Serve with pasta and finely grated Parmesan cheese

If you want to add some color, stir through some peas or finely chopped parsley, but frankly, the Carbonara sauce is perfect just as it is.
