The skin and fat have a very 'unique' smell (not all together a nice one). It smells amost sweaty and smoked. This smell goes away once you have removed the skin and fat and allowed the ccoked meat to cool. I would always suggests asking your butcher to skin it for you. Its remarkably fiddly but they are able to do it for you in seconds!
