Yeast consumes carbohydrates (sugars and more complex carbohydrates such as starch found in grains). These bubbles remain as the spongy texture of bread.

What are cake strips and how do they help in achieving a level cake surface during baking?

Cake strips are fabric strips that are soaked in water and wrapped around the outside of a cake pan before baking. They help in achieving a level cake surface during baking by insulating the edges of the pan, which allows the cake to bake more evenly and prevents the edges from rising faster than the center. This results in a cake that bakes more evenly and has a flat top, making it easier to stack and frost.
