I would not eat that beetroot with white mould on it, it's probably unhealthy and could make a person sick with food-poisoning. It's better to compost it. And, as an aside, if a person has a headache, eat 3-5 pieces of canned or tinned beetroot or red beet: it does cure headaches, so keep some tins in your cupboard if you like.
Beets that have been cleaned can usually last in the fridge for a couple of weeks. If the beets are cooked, they will last a couple of days.
