Because it's more healthy. Doing that, you avoid eating a high level of fat wich is not good, because frying turn vegetable fat into hidrogenated fat, wich causes an effect similar to that of cholesterol in the body.

In terms of your health, baked potatoes are better, as long as you don't load them up with butter, sour cream, or oil. Fried potatoes are fried in oil (obvious, I know), which adds a ton of calories and fat.

Depends on what you desire and what one is cooking. Baking is lower in fats, but takes longer. Frying adds more fats, but many prefer the flavor.
