Sushi rice is a short-grain rice that is sticky when cooked, while arborio rice is a medium-grain rice that is creamy when cooked. The difference in texture affects the final dish as sushi rice helps the sushi hold its shape and stick together, while arborio rice would make the sushi less cohesive and creamy.
