I'm guessing it's because cold sinks and if it's opened from the top, the least cold will escape.
If you get it cold enough, yes. From what I've seen online, the point at which is actually freezes is around -25 degrees Fahrenheit. Some "deep freezers" may be capable of reaching this temperature (there are specialty low temperature freezers that can go well below that, but I'm talking about a more or less standard chest-type freezer), but a typical upright refrigerator/freezer almost certainly will not. If ice cream does not come out of your freezer rock hard, it's probably not cold enough to freeze champagne.
Raccoons do not hibernate. Cold rarely causes them to stay in their den and sleep. However, deep snow makes it nearly impossible to find food so they will den up until conditions improve. I have spent a couple winters in Missouri and the snow can get deep enough to prevent raccoons fro being active.
A good deep freeze will kill most parasites. There are a few species that can have eggs survive freezing but are killed with thorough cooking. I wouldn't smoke infested salmon. Not enough heat to kill the eggs.

A deep chest freezer is more efficient than a refrigerator because it has more insulation to keep the cold air in, requires less frequent door openings, and typically has a more consistent temperature due to its design. Additionally, the cold air in a chest freezer tends to stay at the bottom when the lid is opened, minimizing heat loss compared to a refrigerator where cold air escapes more easily.

Deep freezer is just a term for a style of freezer, in that's it's generally dedcated as a freezer without a refrigerator section. It may also be called `deep' because the freezer box is usually deep so that it can hold quite a bit of product. Most deep freezers tend to have the opening in the top and can be a few feet wide and usually a bit longer, and around 2 1/2 to 3' deep. Of course, there's varoius makes and models from which to choose.
What you see is not steam. It's better to call it fog ... a cloud of tiny water droplets in the air. They form around anything cold, for the same reason that mist condenses and collects on a cold glass of soda or a cold mirror, and that you see your breath outside on a cold day. The cold object cools the air around it, whereupon the ability of the chilled air to hold water vapor is reduced, and some of the water vapor condenses out of the air, into the liquid state.
