Usually you would brown steak, beef and those sort of meats on the grill.
But you can also brown vegetables, bread, Pizza, and any other type of meat other than beef on the grill. Even fruit can be browned on the grill.
The normal foods that would be caramelised under the grill would be fish, sweets (such as creme brûlée), omelette, bread toast, roasted cheese (cheese on bread). You would not normally 'brown' a steak or beef under a grill this would be done in a pan unless you were actually cooking (grilling) the meat like sausages and chops. You would not tend to use a traditional grill to brown pizza, vegtables or fruit as ythese would caramelise normally in an oven or pan.
Many say that the benefits of a barbecue charcoal grill would be the true barbecue flavor that you get from a charcoal grill. Some people prefer a gas grill over a charcoal grill strictly for the convenience, but a charcoal grill will give you a great barbecue flavor when you cook your foods on it.
