In bygone days cooking vessels which sat over a flame were made of iron, steel or tin. Vessels which could go into the oven were usually made of glazed earthenware.
Later there were enameled metal pans; then along came aluminium.
Richer people could afford pans made of copper, a better conductor than iron or steel or aluminium.
