Because the red dye from beetroot is released and adsorbed on baking soda.
if you make a baking soda solution(by mixing water with it), and using a cotton bud(which is dipped from the solution), you will have to write a message or text on a sheet of paper and then wait till it dries. Now take a slice of beetroot and rub it over the paper smoothly. The result is that the message will appear white after some 12 hours unlike how it was when you first rubed the slice over it. This can be considered as the reaction of baking soda solution with beetroot. Concerning the reaction between beetroot and plain baking soda, there is no reaction to happen.
on acids beetroot juice changes to pink or reddish blue
the colour of the yellow strip changes into red..
The colour is not changed.
acids-pink bases- pale yellow neutral liquids-remains red
The indicator with baking soda would likely turn blue or greenish-blue. Baking soda is basic, so it would cause the indicator to shift towards the blue end of the pH scale.

Baking soda is white in color and does not inherently have color-changing properties like universal indicators. If you mix baking soda with an acidic substance, it may react and change color due to the pH shift, but on its own, baking soda remains white.
Blue. As bicarbonate is alkali
Baking soda pH about 8.0 so methyl orange is yellow (above 4.4)
fire, baking soda and vinegar, and frankium in water
Red litmus paper will turn blue in the presence of baking soda, which indicates that the solution is basic.
